Asparagus Risotto – to warm your heart

Today, in Brazil, we celebrate Lovers Day. It is a day we celebrate the joy of having someone special, helping you to get up in bad moments and happily celebrating with you every victory.

At this same day, we hear the terrible news about a hate act in Orlando, USA, against people who were enjoying a Saturday night with friends and lovers.

Well… it is one of such moments when there is no words to describe how terrible it is. And it is the moments when you remind that there is a lot in intolerance and people that believe that kill others is a legitimate right, to defend an ideal.

But it is important to keep love flame alive and share it no matter how. And my way to share love is through food…

So I give you my Asparagus’ Risotto recipe and I hope it warms, more than anything, your heart in this cold and sad day… 🙁

Risotto de Espárragos

Asparagus Risotto

Serves 2

1 tbsp of olive oil

¼ cup of onion, chopped

1 cup of Arborio ice

1/2 cup of white wine

32 oz. of vegetable broth

15 oz. of fresh green asparagus

1 cup of Parmesan cheese

White pepper

1 tbsp of butter

Wash the asparagus, snap off the bottom, peel them and chop them, keeping the “flowers”. Set aside. Bring the broth to a boil.

In a pan, put the olive oil and, once warm, add the onions. When the onions are transparent, add the rice and mix it until all grains are shiny and covered in oil. Put, then, the white wine and mix well, but carefully. When the rice has absorbed the wine, starting adding the broth, ½ cup at a time, mixing carefully. Once the liquid was absorbed, add another ½ cup and mix it. Repeat this process for about 10 minutes. Add the asparagus (not the flowers yes!). Keep repeating the process with the broth: add it in, mix, wait until absorbed and add more broth. After 5 minutes, add the asparagus flowers and the cheese. Keep adding the broth (1/2 cup at a time) for 5 more minutes. Turn off the heat, add the white pepper, mix it, put the butter on the risotto and cover the pan for about 3 minutes, until the butter melts. Mix carefully and serve it, with Parmesan cheese and a little bit of olive oil.
