Baked Shrimps Pasta

So here we are again, with another recipe for Valetine’s Day! The idea here, you know, is to have a complete menu with appetizer, drink, main dish and dessert!

Today we are going to make the main dish! I chose a very simple and light pasta, but VERY atractive because of the shrimps. And pay attention: both shrimps and sauce are baked, all together, in a super easy way. This avoids that mountain of dirty things to be washed. Ok ok… now you like it even more, right? I know. You’re welcome.

 

I LOVE shripm and even more with pasta. So I can absolutely tell you that this mix won my heart!

Before the recipe, let me remind you what we have until now:

Pasta with Baked Shrimp

Serves 2

10oz. spaghetti

10 raw medium shrimps, clean

juice of 1/2 lemon

2 garlic cloves

1 scallion (white part and 1 leaf)

1 tomato

1 tbsp melted butter

1/2 cup white wine

 

Salt

Black pepper

Olive oil

Parsley

Parmesano, to serve

 

Preheat the oven at 400F. Season the shrimps with salt, pepper and lemon juice. Set aside.

Chop the tomato and the garlic and put them in the same dish you will take to the table, together with 1 tbsp of olive oil and a pinch of salt. Take to the oven for 10 minutes.

Meanwhile, cook the past following the instruccions. Reserve 1 tbsp of the cooking water.

 

After 10 minutes, take the dish out of the oven and add the shrimps (without the lemon juice), butter, white wine, salt and pepper. Stir well and take to the oven for 10 more minutes, at 475F.

Take the dish off the oven, add the pasta and the water and stir well. Taste for salt and pepper.

Serve with parsley and the scallion leaf (both chopped), a drizzle of olive oil and parmesan cheese.
