This recipe was featured in “Hamburger Season”of La Tercera, a Chilean newspaper. My mission was to create something rich with one of the La Crianza burgers and, when I saw they had one called Mastodon I had no doubts: I HAD to use it!
The wine onions and blue cheese sauce mix worked perfectly with the burger, that is truly big!
My tip for you is to look for a special hamburger, big, and follow the instructions to have a juicy and medium rare meat. Other than that, help yourself with a good beer!!! 🙂

Hamburger with Blue Cheese Sauce and Wine Onions
1 onion, cut in thin slices
2 tbsp butter
1 tbsp sugar
1 tsp dry rosemary
1 pinch white pepper
1 cup cabernet sauvignon wine
1/2 cup blue cheese
1 tbsp heavy cream
2 burger breads
In a medium pan, melt the butter and add onion, sugar, rosemary and pepper. Stirring from times to times, let them to caramelize (15 to 20 minutes in medium heat) and, then, add the wine. Let it reduce by half, in low heat, and then add the salt (if necessary).
To make the blue cheese sauce, mix together the cheese and the cream, until having a paste.
Make the burger according to package instructions.
To assemble it, put the arugula on the bread, and then the burger. Cover with the cheese sauce and put the onions on it.
